Saffron Bee is a supporting character in the Sonic the Hedgehog comic book series published by Archie Comics.
She is a childhood friend of Charmy Bee, and later becomes his fiancee where she would soon go on to join the Chaotix with him to help his teammates protect Angel Island from threats, and would even become a occasional close ally of Sonic the Hedgehog and the Freedom Fighters.

- Saffron is one of the only non-Sega characters that was created as the main love interest for an already existing Sega character, Charmy.
- Saffron's name is a play-on words. Saffron is a flower which bees get their nectar and pollinate from. Saffron is also a shade of orange the color of her and Charmy's jackets and shoes (Saffron's old shoes). Orange also seems to be her old hair color.
Ironically the color of the flower is purple-pinkish which is the color of her shoes and parts of her jacket now.
- Saffron was originally slated to be killed off in the "Return to Angel Island" arc, due to being utterly useless in her initial appearances, but at the last minute, the writers decided to keep her alive.
- According to Aleah Baker, she had intended to make Saffron make an appearance in the "Endangered Species" arc with a redesigned look. Ideas for this included:
- Changing her eyes to pink or green due to the abundance of blue-eyed characters-this became less of an issue due to changes to Team Chaotix.
- Her shoes and dress becoming yellow-green to differentiate her from Julie-Su's coloration with Jonathan Gray's pom poms added to the shoes and a trim on the dress. Baker also liked the idea of putting polka dots on the dress but had to take into account the difficulty of drawing the dress differently in various panels and keeping track of the pattern.
- Her jacket sleeves being rolled up and the jacket itself being zipped to create more similarity to Charmy's vest, with a flower or Bee design on the back.
- A finalized design in which her head was yellow and her hair was done up in a bob-cut, with a pattern of short yellow and black stripes intended to resemble leggings or knee socks.
- An old-fashioned radio headset.
- Her Nightopian doll is a shout-out to the NiGHTS series, in which Nightopians are the series equivalent to Chao.
- Initial plans between Jeff Axer and Karl Bollers intended for Nack the Weasel to violently kill-off Saffron Bee (along with another unnamed key character) with a Garrote Wire made from piano wire. This idea was scrapped, possibly as it would be deemed way too violent for a children's comic book series.
- Due to the lawsuit between Ken Penders, Archie, and Sega, Saffron's fate is heavily presumed to be written off/non-existent in the Post-Super Genesis Wave timeline, thus meaning any connection she had with Charmy was no longer canon, as Charmy had no knowledge of her presence in the new timeline.
